New events do not overwrite previous ones. Each time a custom event is sent, it is recorded as a new, independent instance.
For example, if a user triggers an "add-to-cart" event yesterday and then triggers the same "add-to-cart" event again today, both events will be recorded separately. This allows you to track all user behavior over time and create segments based on how many times a specific event has occurred within a given date range.
